Soft Pretzel Bites with Sesame Seeds
Soft pretzels originated in Germany and were traditionally associated with Lent. They were given as rewards to children who learned their prayers.

In a large bowl, combine flour, yeast, sugar, and salt. Add warm water and mix until a dough forms.

Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.

Place the dough in a greased bowl, cover with a clean towel, and let it rest for 10 minutes.

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large pot, bring water to a boil. Add baking soda.

Divide the dough into small pieces and roll each piece into a rope. Cut the rope into bite-sized pieces.

Drop the pretzel bites into the boiling water and cook for 30 seconds. Remove with a slotted spoon and place them on the prepared baking sheet.

Brush the pretzel bites with melted butter and sprinkle with sesame seeds and coarse salt.

Bake for 12-15 minutes, until golden brown.
