Hamantaschen Cookies
Hamantaschen cookies are traditionally eaten during the Jewish holiday of Purim. The triangular shape represents the hat of the villain Haman, who is the antagonist in the Purim story.
This is vegetarian recipe. Dish can be prepared in 75 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

In a large bowl, combine the flour, sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the egg and vanilla extract. Add the egg mixture to the flour mixture and mix until the dough comes together.

Divide the dough into two equal portions and shape each portion into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

On a lightly floured surface, roll out one portion of the dough to a thickness of about 1/8 inch. Use a round cookie cutter or glass to cut out circles.

Place a teaspoon of fruit preserves in the center of each circle. Fold up the sides of the circle to form a triangle, leaving the preserves partially exposed.

Place the cookies on the prepared baking sheet and bake for 12-15 minutes, or until lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Repeat steps 5-8 with the remaining dough and preserves.
