Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, and salt.

In a large bowl, beat the butter and sugar until light and fluffy. Add the molasses, egg, and vanilla extract, and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Roll tablespoon-sized portions of dough into balls, then roll in the granulated sugar.

Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are set and the cookies have cracked tops.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
