  1. Preheat the oven to 425°F (220°C). In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  2. Cut the butter into small cubes and add it to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.
  3. In a separate bowl, whisk together the egg, okara, and milk. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Turn the dough out onto a floured surface and gently knead it a few times to bring it together. Pat the dough into a circle about 1 inch thick.
  5. Use a round cookie cutter or a glass to cut out scones from the dough. Place the scones onto a baking sheet lined with parchment paper.
  6. Make a small well in the center of each scone and fill it with a tablespoon of jam.
  7. Bake the scones for 15-18 minutes, or until they are golden brown and cooked through.
