Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Add the egg and vanilla extract to the bowl and mix well.

In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, salt, grapefruit zest, and ground star anise.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the dark chocolate chunks.

Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are set and the centers are slightly soft.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
