Snow Day Cupcakes
Snow day cupcakes are a fun treat to make on a snowy day, and the blue icing and white sanding sugar make them look like little snow-covered mountains!
This is vegetarian recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool completely.

In a small bowl, whisk together the powdered sugar and milk until smooth. Add the blue food coloring and mix until well combined.

Once the cupcakes are cooled, frost them with the blue icing and sprinkle with white sanding sugar to resemble snow.
