Smores Cupcakes
S’mores is a popular campfire treat in the United States, consisting of a roasted marshmallow and a layer of chocolate sandwiched between two graham crackers.
This is vegetarian recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 16.

Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of each cupcake liner.

In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Add the eggs, milk, vegetable oil, and vanilla extract. Mix until well combined.

Stir in the boiling water until the batter is smooth. Pour the batter into the cupcake liners, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool for 10 minutes.

Using a spoon or a piping bag, make a small well in the center of each cupcake. Fill each well with marshmallow creme.

Preheat the broiler. Top each cupcake with a few marshmallows and chocolate pieces. Place under the broiler for about 1-2 minutes, or until the marshmallows are golden brown and the chocolate is melted.

Remove from the oven and let cool completely before serving.
