Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.

In a large bowl, whisk together the flour, baking powder, salt, and black pepper.

In a separate bowl, beat the eggs. Add the milk and olive oil, and mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in the grated zucchini, carrot, red bell pepper, green onion, and shredded cheddar cheese.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
