S’mores, short for ‘some more’, are a popular campfire treat in the United States, typically made with toasted marshmallows, chocolate, and graham crackers.

  1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch (23 cm) round cake pan.
  2. In a food processor, pulse the graham crackers until finely ground. In a bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of the prepared cake pan.
  3. In a separate bowl, whisk together the eggs and vanilla extract. In another bowl, sift together the flour, cocoa powder, baking powder, and salt.
  4. Gradually add the egg mixture and milk to the dry ingredients, mixing until just combined. Pour the batter over the graham cracker crust.
  5. Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  6. In a small saucepan, heat the heavy cream until hot but not boiling. Remove from the heat and stir in the chocolate chips until melted and smooth. Let the ganache cool slightly.
  7. In a mixing bowl, beat the powdered sugar, softened butter, and vanilla extract until creamy. Spread the frosting over the cooled cake.
  8. Pour the ganache over the frosting, allowing it to drip down the sides. Top with mini marshmallows.
  9. Let the cake rest for at least 1 hour before serving to allow the flavors to meld. Enjoy!
