Cut the tops off the bell peppers and remove the seeds.

In a large bowl, combine cooked quinoa, black beans, corn, diced onion, minced garlic, tomato sauce, cheddar cheese, cumin, chili powder, salt, and pepper.

Stuff the bell peppers with the quinoa mixture.

Place the stuffed peppers in the slow cooker.

Cook on low for 4 hours.

Allow the peppers to rest for 10 minutes before serving.
