In a large mixing bowl, combine the all-purpose flour, granulated sugar, unsalted butter, and salt. Mix until the dough comes together. Flatten the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a separate bowl, mix together the fresh pineapple, cornstarch, brown sugar, lemon juice, and vanilla extract.
