  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Cut the cold butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until it resembles coarse crumbs.
  4. Make a well in the center of the mixture and pour in the milk. Stir until just combined.
  5. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  6. Roll or pat the dough to a thickness of about 1 inch.
  7. Heat a cast iron skillet over medium heat and melt a tablespoon of butter in it.
  8. Place the biscuits in the skillet and cook for about 2 minutes on each side, until golden brown.
