Skillet-Baked Peach and Cherry Cobbler

Preheat the oven to 375°F (190°C).

In a large bowl, combine the peaches, cherries, 1/4 cup of granulated sugar, and 1/2 teaspoon of vanilla extract. Toss to coat the fruit evenly.

In a separate bowl, whisk together the flour, remaining 1/4 cup of granulated sugar, baking powder, and salt.

Cut the butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to mix the butter into the flour until it resembles coarse crumbs.

Stir in the milk and remaining 1/2 teaspoon of vanilla extract until just combined.

Place a 10-inch cast iron skillet over medium heat and melt 2 tablespoons of butter.

Pour the fruit mixture into the skillet and spread it out evenly.

Drop spoonfuls of the dough mixture over the fruit, covering it as much as possible.

Transfer the skillet to the preheated oven and bake for 35-40 minutes, or until the cobbler topping is golden brown and the fruit is bubbling.

Remove from the oven and let it rest for 10 minutes before serving.
