Mashed potato soup is a great way to use up leftover mashed potatoes from a previous meal.

Peel and chop the potatoes, onion, and garlic.

In a large pot, boil the potatoes in vegetable stock until tender.

In a separate pan, sauté the onion and garlic in butter until translucent.

Once the potatoes are cooked, drain them and return them to the pot.

Add the sautéed onion, garlic, milk, salt, and black pepper to the pot.

Use a potato masher or immersion blender to mash the potatoes until smooth.

Bring the soup to a simmer and let it cook for another 5 minutes.

Serve the soup hot, garnished with chives and a dollop of sour cream.
