Preheat the oven to 200°C (400°F).

Wash and scrub the potatoes, then boil them until they are just tender.

Drain the potatoes and let them cool slightly.

Cut a small slice off the top of each potato and scoop out the flesh, leaving a thin shell.

In a bowl, mash the potato flesh with the mixed herbs, butter, minced garlic, grated cheddar cheese, salt, and black pepper.

Fill each potato shell with the mashed potato mixture.

Place the stuffed potatoes on a baking tray and bake in the preheated oven for about 20-25 minutes, or until the tops are golden and crispy.

Remove from the oven and let them rest for 5 minutes before serving.
