Wraps are believed to have originated in Mexico, where they were traditionally made with corn tortillas and filled with various ingredients.

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the diced sweet potatoes, sliced red bell pepper, sliced red onion, black beans, corn kernels, cherry tomatoes, olive oil, lime juice, cumin, chili powder, salt, and black pepper. Toss everything together until well coated.
  3. Spread the vegetable mixture on a baking sheet and roast in the preheated oven for 20 minutes, or until the vegetables are tender and slightly charred.
  4. While the vegetables are roasting, warm the tortilla wraps in a dry skillet over medium heat for about 1 minute on each side, or until pliable.
  5. Remove the roasted vegetables from the oven and let them cool for a few minutes.
  6. To assemble the wraps, place a tortilla wrap on a clean surface. Add a scoop of the roasted vegetable mixture onto the center of the wrap. Top with sliced avocado and chopped cilantro.
  7. Fold the sides of the wrap over the filling, then roll it up tightly from bottom to top.
  8. Repeat with the remaining tortilla wraps and filling.
  9. Serve the wraps immediately, or wrap them in foil and refrigerate for later. Enjoy!
