  2. In a saucepan, combine the fruit filling, granulated sugar, cornstarch, and lemon juice. Cook over medium heat until thickened, stirring constantly.
  3. Roll out the puff pastry sheets and cut into squares.
  4. Place a spoonful of the fruit filling in the center of each square.
  5. Fold the pastry over the filling to form a triangle and press the edges to seal.
  6. Brush the turnovers with beaten egg.
  7. Bake for 15-20 minutes or until golden brown.
  8. Optional: Heat oil in a frying pan and fry the turnovers for a few seconds on each side for added crispiness.
