Sharp Cheddar “Lasagna” Made Over
Traditional lasagna is made with mozzarella cheese, but this recipe uses sharp cheddar cheese for a delicious twist.
This is vegetarian and high protein recipe. Dish can be prepared in 85 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions, then drain and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, and sauté until fragrant and translucent.

Add fresh spinach to the skillet and cook until wilted. Remove from heat and set aside.

In a medium bowl, combine ricotta cheese, grated Parmesan cheese, beaten egg, salt, black pepper, and dried oregano. Mix well.

In a greased baking dish, spread a layer of marinara sauce. Arrange a layer of cooked lasagna noodles on top.

Spread half of the ricotta mixture over the noodles, followed by half of the spinach mixture. Sprinkle with shredded sharp cheddar cheese.

Repeat the layers with marinara sauce, lasagna noodles, ricotta mixture, spinach mixture, and sharp cheddar cheese.

Top with a final layer of marinara sauce and shredded sharp cheddar cheese.

Cover the baking dish with foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

Remove from the oven and let it rest for 10 minutes before serving.

Garnish with fresh basil leaves and serve hot.
