Rinse the navy beans and soak them in water overnight.

In a large pot, add the soaked beans, ham hock, onion, celery, carrots, garlic, bay leaves, thyme, salt, and black pepper.

Add enough water to cover the ingredients and bring to a boil.

Reduce heat to low and simmer for 2 hours, or until the beans are tender.

Remove the ham hock from the pot and shred the meat.

Return the shredded meat to the pot and cook for an additional 10 minutes.

Remove the bay leaves and serve hot.
