Seitan & Mushroom Marengo
Marengo is a traditional Italian dish named after the Battle of Marengo, where Napoleon Bonaparte allegedly enjoyed a similar meal after his victory.

Heat olive oil in a large skillet over medium heat. Add onions and garlic, and sauté until onions are translucent.

Add seitan and mushrooms, and cook until mushrooms are tender.

Sprinkle flour over the mixture and stir well to coat.

Pour in red wine and vegetable broth, and stir to combine.

Add tomatoes, thyme, bay leaf, salt, and black pepper. Stir to combine.

Reduce heat to low, cover, and simmer for 30 minutes.

Remove from heat and let rest for 10 minutes.

Serve hot, garnished with parsley.
