  4. Pour in red wine and vegetable broth, and stir to combine.
  5. Add tomatoes, thyme, bay leaf, salt, and black pepper. Stir to combine.
  6. Reduce heat to low, cover, and simmer for 30 minutes.
  7. Remove from heat and let rest for 10 minutes.
  8. Serve hot, garnished with parsley.
