Sweet potatoes are not actually related to regular potatoes and belong to the morning glory family.

This is vegetarian and gluten free recipe. Dish can be prepared in 80 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
  4. While the sweet potatoes are baking, heat olive oil in a pan over medium heat.
  5. Add the onion and garlic to the pan and sauté until softened.
  6. Add the spinach to the pan and cook until wilted.
  7. Remove the sweet potatoes from the oven and let them cool slightly.
  8. Slice the sweet potatoes in half lengthwise and scoop out some of the flesh to create a well.
  9. Mash the scooped-out sweet potato flesh in a bowl.
  10. Add the sautéed onion, garlic, and spinach mixture to the bowl and mix well.
  11. Stir in the feta cheese, salt, black pepper, paprika, and fresh parsley.
  12. Spoon the filling back into the sweet potato skins.
  13. Place the stuffed sweet potatoes back in the oven and bake for an additional 10-15 minutes, or until heated through.
  14. Remove from the oven and let them rest for 5 minutes.
  15. Serve hot and enjoy!
