Preheat the oven to 375°F (190°C).

Remove the stems from the portobello mushrooms and set aside.

Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic and cook until softened.

Add chopped mushroom stems and spinach to the pan and cook until wilted.

Remove from heat and stir in crumbled feta cheese, breadcrumbs, chopped parsley, salt, and black pepper.

Stuff each mushroom cap with the filling mixture and place on a baking sheet.

Bake in the preheated oven for 20-25 minutes, until the mushrooms are tender and the filling is golden brown.
