Grease a muffin tin with olive oil.

In a bowl, mix together bread crumbs, Parmesan cheese, salt, black pepper, and fresh parsley.

Divide the mixture evenly among the muffin tin cups, pressing it down to form nests.

Bake in the preheated oven for 5 minutes.

Carefully crack an egg into each nest.

Bake for another 10 minutes or until the eggs are cooked to your liking.

Remove from the oven and let it cool for a few minutes.
