  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the chocolate cookie crumbs and melted butter until the crumbs are evenly moistened. Press the mixture into the bottom of a 9-inch (23cm) springform pan.
  3. In a large bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.
  4. Stir in the melted chocolate and mix until well combined. Pour the batter over the crust in the springform pan.
  5. Bake for 55-60 minutes or until the center is set and the top is slightly cracked.
  6. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes.
  7. Carefully run a knife around the edge of the pan to loosen the cheesecake.
  8. Remove the sides of the springform pan and let the cheesecake cool completely.
  9. Once cooled, refrigerate for at least 2 hours.
  10. Before serving, drizzle the salted caramel sauce over the cheesecake and sprinkle with sea salt flakes.
  11. Slice and serve.
