  1. Preheat the oven to 350°F (175°C).
  2. Cut the rustic bread into 1-inch cubes and spread them on a baking sheet. Toast in the oven for 10 minutes until slightly crisp.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion, celery, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.
  4. Add red mustard greens, currants, and pine nuts to the skillet. Sauté for another 3 minutes until the greens are wilted.
  5. In a large bowl, combine the toasted bread cubes, sautéed vegetables, vegetable broth, fresh thyme, salt, and black pepper. Mix well.
  6. Transfer the mixture to a greased baking dish. Cover with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10 minutes until the top is golden brown.
  8. Let the stuffing rest for 10 minutes before serving.
