Preheat the oven to 375°F (190°C).

Roll out the pie crust and place it in a tart pan.

In a bowl, mix together apricots, cranberries, sugar, cornstarch, lemon juice, and vanilla extract.

Pour the fruit mixture into the tart crust.

Fold the edges of the crust over the fruit, leaving the center exposed.
