Grate the carrots and set aside.

In a large bowl, combine the all-purpose flour, butter, and a pinch of salt. Mix until the mixture resembles breadcrumbs.

Add 1 beaten egg and mix until the dough comes together.

Press the dough into a tart pan and bake for 10 minutes.

In a pan, heat some oil and sauté the onion and garlic until translucent.

Add the grated carrots and cook until tender.

Season with salt, black pepper, and chopped dill.

In a separate bowl, whisk together the remaining 2 eggs and sour cream.

Pour the carrot mixture onto the pre-baked tart crust.

Pour the egg-sour cream mixture on top.

Bake for 30 minutes or until the tart is set.

Let it rest for 10 minutes before serving.
