Rinse the barley under cold water.

In a large pot, bring 6 cups of water to a boil and add the washed barley. Cook for 30 minutes.

In the meantime, clean and slice the mushrooms and dice the onion, carrots, and potatoes.

Heat some oil in a separate pan and sauté the onion, carrots, and mushrooms until softened.

Add the sautéed vegetables to the pot with the barley.

Add the vegetable broth, bay leaves, thyme, dill, salt, and black pepper.
