Runeberg’s muffins are named after Johan Ludvig Runeberg, Finland’s national poet. They are traditionally eaten on Runeberg’s birthday, February 5th, to celebrate his life and work.

This is vegetarian recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

  1. Preheat the oven to 200°C (390°F). Grease a muffin tin.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, combine the almond flour, breadcrumbs, ground almonds, and cardamom.
  5. Gradually add the dry mixture to the butter mixture, alternating with the rum and milk.
  6. In another bowl, whisk together the all-purpose flour and baking powder. Fold this into the batter.
  7. Spoon the batter into the prepared muffin tin, filling each cup about halfway.
  8. Make a small well in the center of each muffin and fill with raspberry jam.
  9. Bake for 15-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  11. Dust with powdered sugar before serving.
