Rosemary Shortbread Cookies
Shortbread cookies originated in Scotland and are traditionally made with just three ingredients: butter, sugar, and flour.

Preheat the oven to 350°F (175°C).

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Add the vanilla extract, chopped rosemary, and salt. Mix well.

Gradually add the flour and mix until the dough comes together.

Roll the dough into a log shape and wrap it in plastic wrap. Chill in the refrigerator for 30 minutes.

Slice the chilled dough into 1/4-inch thick rounds and place them on a baking sheet lined with parchment paper.

Bake for 12-15 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
