Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the all-purpose flour, grated Parmesan cheese, chopped fresh rosemary, granulated sugar, and salt.

Add the softened salted butter to the bowl and mix until the dough comes together.

Shape the dough into a log and wrap it in plastic wrap. Chill in the refrigerator for 30 minutes.

Slice the chilled dough into 1/4-inch thick rounds and place them on a baking sheet lined with parchment paper.

Bake for 15-20 minutes, or until the edges are golden brown.

Remove from the oven and let the shortbread cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
