Rolo candies were first introduced in the United Kingdom in 1937 and later became popular worldwide. They are known for their caramel-filled chocolate center.

Preheat the oven to 350°F (175°C).

In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Take a tablespoon of cookie dough and flatten it in your palm. Place a Rolo candy in the center and wrap the dough around it, forming a ball. Repeat with the remaining dough and Rolos.

Place the cookie dough balls onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are set and the tops are slightly cracked.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
