  1. Preheat the oven to 400°F (200°C).
  2. Cut the winter squash in half, remove the seeds, and cut into 1-inch cubes.
  3. Toss the squash cubes in 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  4. Roast the squash in the preheated oven for 30-35 minutes, or until tender and slightly caramelized.
  5. Cook the pasta according to package instructions until al dente.
  6. While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat.
  7. Add the minced garlic, diced onion, and sage leaves to the skillet and sauté until fragrant and translucent.
  8. Once the pasta is cooked, reserve 1/2 cup of the cooking water, then drain the pasta.
  9. Add the drained pasta to the skillet with the sautéed onion mixture.
  10. Toss to coat the pasta in the aromatic oil.
  11. Add the roasted winter squash to the skillet and gently mix until combined.
  12. If the pasta seems dry, add some of the reserved cooking water to loosen it up.
  13. Remove the skillet from heat, sprinkle with grated Parmesan cheese and red pepper flakes.
  14. Serve hot and enjoy!
