Carrot cake was originally made without carrots and instead used parsnips.
This is vegetarian recipe. Dish can be prepared in 90 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Preheat the oven to 350°F (175°C).

Peel and grate the carrots.

In a large bowl, combine the grated carrots, all-purpose flour, brown sugar, vegetable oil, eggs, vanilla extract, baking powder, cinnamon, nutmeg, and salt. Mix well.

Pour the batter into a greased baking dish and spread it evenly.

Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

In the meantime, prepare the cream cheese frosting by beating together the cream cheese, powdered sugar, butter, and lemon juice until smooth.

Once the carrot cake bars are done baking, let them cool for 10 minutes.

Spread the cream cheese frosting over the cooled bars.

Sprinkle with chopped walnuts.

Allow the bars to rest for 30 minutes before cutting into squares.
