Sunshines Thumbprint Jelly Cookies
Thumbprint cookies are believed to have originated in Sweden and are traditionally filled with lingonberry jam.

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour and salt.

In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg yolks and vanilla extract.

Gradually add the flour mixture to the butter mixture, mixing until just combined.

Roll the dough into 1-inch balls and place them onto the prepared baking sheet. Make a small indentation in the center of each cookie with your thumb or the back of a spoon.

If desired, roll the edges of the cookies in finely chopped nuts.

Fill each indentation with a small amount of jelly or jam.

Bake for 10-12 minutes, or until the edges of the cookies are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
