Preheat the oven to 200°C (400°F).

Cut the pumpkin into wedges and remove the seeds.

Place the pumpkin wedges on a baking sheet and drizzle with olive oil. Sprinkle with salt and black pepper.

Roast the pumpkin in the preheated oven for 30-40 minutes, or until tender.

While the pumpkin is roasting, prepare the cheese fondue. Grate the cheddar cheese and gruyere cheese.

In a saucepan, heat the milk over medium heat. Add the grated cheeses and stir until melted and smooth.

In a small bowl, mix the cornstarch with a little water to make a slurry. Add the slurry to the cheese mixture and stir until thickened.

Add the minced garlic and nutmeg to the cheese fondue and stir to combine.

Remove the roasted pumpkin from the oven and let it rest for 5 minutes.

Serve the roast pumpkin with the cheese fondue on the side.
