In a skillet, heat olive oil over medium heat. Add garlic and onion, sauté until translucent.

Add mushrooms and cook until they release their moisture.

Add spinach and cook until wilted. Season with salt and pepper.

In a separate bowl, mix ricotta cheese with parmesan cheese.

Spread a thin layer of crepe batter on a non-stick pan and cook until golden brown.

Place a spoonful of the ricotta mixture on one half of the crepe, top with the spinach and mushroom mixture.
