Prepare all the ingredients by thinly slicing the carrots, cucumber, and herbs.

Fill a large bowl with warm water. Dip a sheet of rice paper into the water for a few seconds until it softens.

Place the softened rice paper on a clean surface. Arrange a small amount of each ingredient in the center of the rice paper.

Fold the sides of the rice paper over the filling, then roll it up tightly. Repeat with the remaining ingredients.

Heat a pan over medium heat and add a small amount of oil. Fry the rice paper galettes for 2-3 minutes on each side until crispy.
