  4. Fold the sides of the rice paper over the filling, then roll it up tightly. Repeat with the remaining ingredients.
  5. Heat a pan over medium heat and add a small amount of oil. Fry the rice paper galettes for 2-3 minutes on each side until crispy.
  6. Serve the galettes with lime wedges and dipping sauce.
