  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  4. Divide the dough into two equal portions. Add food coloring to one portion and mix until the desired color is achieved.
  5. Wrap each portion of dough in plastic wrap and refrigerate for 30 minutes.
  6. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  7. Roll out each portion of dough into a rectangle of the same size. Place one layer of dough on top of the other and press gently to adhere.
  8. Starting from one end, roll the dough into a log.
  9. Slice the log into cookies, about 1 cm thick, and place them on the prepared baking sheet.
  10. Bake for 12 minutes or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
