Rhubarb Rolls
Rhubarb is often mistaken for a fruit, but it is actually a vegetable. It belongs to the same family as sorrel and buckwheat.

Preheat the oven to 375°F (190°C).

Wash and trim the rhubarb stalks, then cut them into small pieces.

In a bowl, mix the rhubarb, granulated sugar, and cinnamon until well combined.

In a saucepan, melt the butter over medium heat, then add the rhubarb mixture and cook until the rhubarb is soft and the sugar has dissolved, stirring occasionally.

Roll out the puff pastry sheets and cut them into rectangles.

Spoon the rhubarb mixture onto the pastry rectangles, leaving a small border around the edges.

Brush the edges of the pastry with beaten egg, then fold the pastry over the filling and press the edges to seal.

Place the rhubarb rolls on a baking sheet lined with parchment paper.

Brush the tops of the rolls with beaten egg.

Bake in the preheated oven for about 20-25 minutes, or until the pastry is golden brown.
