Rhubarb Custard Cake

Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.

In a mixing bowl, combine the flour, baking powder, and salt.

In another bowl, cream together the butter and granulated sugar. Beat in the eggs one at a time, then stir in the vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

Spread the batter evenly into the prepared cake pan. Arrange the rhubarb pieces on top.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Dust with powdered sugar before serving.
