Trim and chop the rhubarb into 1-inch pieces.

In a bowl, mix the rhubarb with granulated sugar, ground cinnamon, and vanilla extract.

In a separate bowl, combine the all-purpose flour, unsalted butter, and a pinch of salt. Rub the mixture with your fingertips until it resembles breadcrumbs.

Divide the rhubarb mixture among individual tartlet tins.

Sprinkle the crumble mixture evenly over the rhubarb.

Bake in the preheated oven for 30 minutes until the crumble is golden and the rhubarb is tender.

Remove from the oven and let it rest for 10 minutes.

Sprinkle with demerara sugar before serving.
