  1. Preheat the oven to 375°F (190°C).
  2. In a medium saucepan, combine the rhubarb, sugar, and lemon juice. Cook over medium heat until the rhubarb is tender and the mixture thickens, about 10 minutes. Remove from heat and let cool.
  3. In a bowl, mix the cream cheese and vanilla extract until smooth.
  4. Lay one sheet of phyllo dough on a clean surface and brush with melted butter. Repeat with the remaining sheets, stacking them on top of each other.
  5. Spread the cream cheese mixture evenly over the phyllo dough, leaving a 1-inch border.
  6. Spoon the rhubarb mixture over the cream cheese.
  7. Roll up the strudel tightly, tucking in the ends as you go.
  8. Place the strudel on a baking sheet lined with parchment paper.
  9. Brush the top of the strudel with beaten egg.
