Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.

In a food processor, combine almond flour, powdered sugar, and cocoa powder. Process until well combined.

In a separate bowl, mix together red food coloring and granulated sugar until the color is evenly distributed.

In a large mixing bowl, beat the egg whites and cream of tartar until foamy. Gradually add the colored sugar mixture while continuing to beat until stiff peaks form.

Gently fold the almond flour mixture into the egg white mixture until fully incorporated.

Transfer the batter into a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheets.

Tap the baking sheets on the counter a few times to release any air bubbles. Let the macarons rest for 30 minutes.

Bake the macarons in the preheated oven for 15 minutes. Let them cool completely on the baking sheets.

In a mixing bowl, beat cream cheese, unsalted butter, powdered sugar, vanilla extract, and salt until smooth and creamy.

Pair the macaron shells of similar size. Pipe a dollop of cream cheese buttercream onto one shell and sandwich it with another shell.

Repeat with the remaining macaron shells and filling. Refrigerate the macarons for at least 1 hour before serving.
