Red Velvet Chocolate Ganache Cake
Red velvet cake is believed to have originated in the Victorian era, and its signature red color was originally achieved by using beet juice.

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and red food coloring.

Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. In a small bowl, mix together the vinegar and baking soda, then quickly fold into the batter.

Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

In a small saucepan, heat the heavy cream until it begins to simmer. Remove from heat and add the chopped chocolate. Let it sit for 1-2 minutes, then stir until smooth. Allow the ganache to cool for about 10 minutes.

In a mixing bowl, combine the powdered sugar, vanilla extract, and cooled ganache. Beat until smooth and creamy.

Place one cake layer on a serving plate and spread a layer of ganache frosting on top. Place the second cake layer on top and frost the entire cake with the remaining ganache frosting.
