Preheat the oven to 350°F (175°C).

In a large mixing bowl, combine the red velvet cake mix, melted unsalted butter, egg, red food coloring, and vanilla extract. Mix until well combined.

Press the mixture into the bottom of a greased 9x9-inch baking dish.

In a separate bowl, mix together the sweetened condensed milk and caramel sauce. Pour the mixture over the red velvet crust.

Sprinkle the chocolate chips and crumbled shortbread cookies over the top.

Bake in the preheated oven for 25 minutes, or until the edges are golden brown.
