In a pan, sauté the onion and garlic in olive oil until translucent.

Add the red cabbage and cook until softened.

Remove from heat and let it cool.

In a bowl, crumble the blue cheese and mix in the chopped walnuts.

Add the cooled red cabbage mixture to the cheese and walnut mixture. Season with salt and black pepper.

Roll out the empanada dough and cut into circles.

Spoon the filling onto each dough circle and fold over to create half-moon shapes. Press the edges to seal.
