  1. Preheat the oven to 325°F (163°C).
  2. In a saucepan, heat the heavy cream over medium heat until it begins to steam.
  3. Split the vanilla bean lengthwise and scrape out the seeds. Add the seeds and the vanilla bean pod to the cream.
  4. Remove the saucepan from heat and let it steep for 10 minutes.
  5. In a mixing bowl, whisk together the egg yolks and granulated sugar until well combined.
  6. Slowly pour the hot cream into the egg yolk mixture, whisking constantly.
  7. Strain the mixture through a fine-mesh sieve to remove the vanilla bean pod and any lumps.
  8. Divide the raspberries among four ramekins.
  9. Pour the custard mixture over the raspberries, filling each ramekin about 3/4 full.
  10. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  11. Carefully transfer the baking dish to the preheated oven and bake for 35-40 minutes, or until the custards are set around the edges but still slightly jiggly in the center.
  12. Remove the ramekins from the water bath and let them cool to room temperature.
  13. Once cooled, cover the ramekins with plastic wrap and refrigerate for at least 2 hours, or overnight.
  14. Just before serving, sprinkle each custard with a thin, even layer of turbinado sugar.
  15. Use a kitchen torch to caramelize the sugar until it forms a golden brown crust.
  16. Let the custards sit for a few minutes to allow the sugar to harden, then serve immediately.
