  2. In a small bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a mini cheesecake pan.
  3. In a large bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs, one at a time, beating well after each addition.
  4. Pour the cream cheese mixture over the crust in the mini cheesecake pan.
  5. Drop spoonfuls of raspberry jam onto the cream cheese mixture. Use a toothpick or skewer to swirl the jam into the cream cheese.
  6. Bake for 20-25 minutes or until the centers are set.
  7. Remove from the oven and let cool in the pan for 10 minutes.
  8. Transfer the mini cheesecakes to a wire rack to cool completely.
  9. Refrigerate for at least 2 hours before serving.
