Raspberry-Mint Brownies
The combination of raspberries and mint adds a refreshing twist to classic brownies.

Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.

Melt the dark chocolate and butter in a heatproof bowl over simmering water.

In a separate bowl, whisk together the sugar, eggs, and vanilla extract.

Gradually add the melted chocolate mixture to the sugar mixture, stirring until well combined.

Sift in the flour and cocoa powder, and fold until just combined.

Gently fold in the raspberries and mint leaves.

Pour the batter into the prepared baking dish and smooth the top.
